How the pigs are raised

• Heritage breeds: English Large Black, Wessex Saddleback, Berkshire and Hampshire Duroc cross. They take eight to nine months to grow out, far longer than a conventional piggery.
• Free range on pasture, rotated through the paddocks. The pigs stay healthy and the ground gets fed.
• Certified organic feed, plus whatever they forage: dandelions, plantains, native turnips and blady grass roots.
• Bred over years for natural resilience. Raised without antibiotics.

• Certified organic by Southern Cross Certified Australia under the National Standard for Organic and Bio-Dynamic Produce. View the certificate.
• Winner, From the Paddock, 2026 delicious. Harvey Norman Produce Awards. The national category, judged by a national panel of chefs. NSW winner in 2025.

Delivery, storage and thawing

• Sent frozen. It goes straight into the freezer on arrival.
• Add it to a beef order and it comes in the same delivery. Orders ship weekly and we'll be in touch after you order to confirm delivery details that suit you.
• Thaw in the fridge, never on the bench. Chops, ribs and sausages need a day. Allow up to two days for the Boston butt.
